MIAMI BEACH, FL (November 7, 2024) – Essensia Restaurant & Bar, nestled in the heart of Miami Beach's historic The Palms Hotel & Spa, launches new Autumn Menus of mindfully sourced, healthfully prepared Mediterr-Asian Cuisine, together with a new line-up of Weekday Specials highlighting the restaurant’s signature plant-forward and sustainable seafood offerings and its all-natural wine list.
Located just steps away from the ocean, in the luxurious and tranquil Mid-Beach area, Essensia offers a sanctuary for the senses designed to nurture both its patrons and the planet. Mediterr-Asian Flavors: Healthfully Prepared, Mindfully Sourced
The culinary approach at Essensia centers on maximizing nutritional value and flavor while minimizing the impact on the environment. Essensia sources premium, in-season, and sustainable ingredients wherever possible. Most produce, dairy, and other specialty ingredients are from Florida farms and purveyors. Meats and poultry are hormone-free and sustainably farmed, and all seafood choices follow the guidelines of the Monterey Bay Aquarium Seafood Watch program. This commitment to well-being extends to a diverse menu, offering many glutenfree, vegetarian, and vegan choices. Moreover, Essensia is dedicated to environmental stewardship, actively engaging in practices that reduce food waste, recycling practices, energy, and water conservation, and the support of an eco-friendly lifestyle.
The flavors of Chef de Cuisine Diana Tandia’s menus are influenced by her African heritage, her classical French schooling, as well as by her extensive travels in Asia. Mentored by culinary giants Jean-Georges Vongerichten and Daniel Boulud, Chef Tandia skillfully weaves African, 1 French, Mediterranean and Asian influences into her cooking–but always with an emphasis on premium, seasonal, wholesome ingredients.
This autumn, start with a Miso Butternut Squash Soup or the Grilled Herb Lamb Kofta with lemon tahini, harissa, sumac and artisan pita bread. The seasonal Kale Harvest Salad currently presents a canvas of butternut squash, apple, avocado, fire-roasted corn, pomegranate, crumbled feta and toasted pumpkin seeds, drizzled with a tahini miso dressing. Florida Cobia Crudo features a seasonal persimmon relish, avocado mousse, espelette pepper and citrus yuzu vinagigrette. orange citrus soy dressing, avocado, Fresno chili pepper, and micro cilantro.
Signature Mains include the robust Jungle Seasonal Vegetable Curry with aromatic coconut lemongrass broth, kaffir lime, and fresh seasonal vegetables, accompanied by stir-fried forbidden rice. The Rosemary Lamb Shank, slow-cooked to perfection, accompanied by garlic mashed potatoes, ratatouille and lamb jus, is an example of Chef Tandia’s perfect execution of classical French cuisine, while her Butternut Squash Risotto - an indulgence of Gratitude Gardens organic mixed mushrooms from Loxahatchee, Florida, kale, butternut squash, parmesan tules, and black truffle, reflects her commitment to mindful sourcing. For a sweet finale, the autumn menu’s Seasonal Persimmon Tarte and Creamy Basque Cheesecake provide the perfect endnote to the dining experience.
